Balsamic Roasted Purple Cabbage

While this side dish does take some time to cook, I love it because it adds some variety to my usual vegetable choices!

Balsamic Roasted Purple Cabbage
Ingredients
- Purple cabbage
- 3 tbl. Olive oil
- 3 tbl. Balsamic vinegar
- 1 tsp. Salt
- ¼ tsp Pepper
Instructions
- Chop the purple cabbage in strips.Purple cabbage
- Spread the cabbage on a large sheet pan. Sprinkle all the remaining ingredients over the cabbage.3 tbl. Olive oil, 3 tbl. Balsamic vinegar, 1 tsp. Salt, 1/4 tsp Pepper
- Roast at 375 °F for 45 minutes, mixing after 15 to make sure all of the cabbage is coated in the balsamic vinegar and oil.
Notes
Tip: To keep cleanup to a minimum, coat your baking sheet with a layer of aluminum foil, and then add a layer of parchment paper on top. The double layer prevents the oils from baking onto the pan and makes the clean up as easy as possible!
