Ingredients
  

  • 1 15 oz can chickpeas drained
  • 1 14.5 oz can diced tomatoes with chilies (or regular diced tomatoes)
  • 1 medium red onion sliced (or regular onion)
  • 4 chicken quarters e.g., thighs and drumsticks
  • 1-2 tsp turmeric
  • 2-3 tbsp chili powder
  • Salt and pepper to taste
  • Optional: 1/4 cup dry or semi-dry white wine

Instructions
 

  • Layer the chickpeas, diced tomatoes, and sliced onions in the bottom of a crockpot.
    1 15 oz can chickpeas, 1 14.5 oz can diced tomatoes with chilies, 1 medium red onion
  • Lay the chicken quarters on top of the onion layer.

  • Sprinkle the chicken with salt, pepper, turmeric, and chili powder.
    1-2 tsp turmeric, 2-3 tbsp chili powder, Salt and pepper to taste
  • If desired, add a little water or white wine for extra moisture. Note that this step is optional, as the chicken will release its own juices during cooking.
    Optional: 1/4 cup dry or semi-dry white wine
  • Cover the crock pot and cook on low for 6-8 hours or until the chicken is tender and fully cooked.
